Pecorino Moliterno has full, rounded flavours with a firm texture.  Aged for over 3 months, the cheese is rubbed with olive oil during the curing process and then drained into baskets before aging that gives this cheese a basket-like rind.  A strong flavoured cheese, it is an excellent table cheese or pairs beautifully with pasta or risotto dishes.
