Raclette is a cheese made to be melted.  It’s name comes from the French verb ‘racler’,  meaning to ‘scrape’.  The cheese is washed with a brine solution that encourages a sticky rind, resulting in a paste that is smooth, supple and silky.  When melted is reveals a distinct nutty flavour.
